utils/build-galaxy-release.sh: Fix covscan findings

warning[SC2044]: For loops over find output are fragile. Use find -exec
  or a while read loop.
warning[SC2164]: Use 'cd ... || exit' or 'cd ... || return' in case cd
  fails.
